O.k. guys I am a single parent of two girls and it gets a little difficult to cook something completely different everyday. So when you go grocery store to shop, you could possibly spending less than usual. Remember, you'll be using the same ingredients for different meals.
Bar - B - Que Baked Chicken Dinner with MASHED POTATOES and CORN
Prep time (11/2 hours)
Ingredients (serving 6)
1 (4 pound) whole chicken or (parts)
1 bottle of bar-b-que sauce
1/2 cup of chopped onion
1/2 cup chopped green pepper
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of garlic powder
1/2 cup brown sugar
3 small - medium french rolls
4 Russet potatoes peeled and cubed
1/3 cup milk
3 tablespoons of butter
1/2 teaspoon salt
-dash of white pepper
2 cans of corn
Preparation
Peel and cube your potatoes before your chicken goes in the oven, remember potatoes can be cooking while chicken is cooking
And your 2 cans of corn can be cooking along with your potatoes in seperate pot.
So lets boil our potatoes...simple... 1 pot of water and throw those taters in there for about 25-30mins.
When those potatoes are done we're going to grain the water using a strainer , add those ingredients and smash them up..You can use a potato masher or fork if there tender enough...and they should be.
Preheat oven to (350 degrees) some people use a higher over temp..but why over cook the bird.....
Season the chicken with all the ingredients except bar-b-que sauce
Place in oven for 35mins, turning it periodically, remove cover for about 10-13mins... after chicken browns add brown sugar to bar-b-que sauce and pour over your golden brown chicken
And Walaaaa....MEAL 1
Now for the next night of dinner...
Bar-B-Que Chicken Sandwiches with MASHED POTATOES and CORN
Let's take our chicken from the night before, and we're going to take the meat off the chicken, you can use a fork or your fingers, and once you take the chicken off, we're going to shred it to your liking..(you might like stringy or somewhat chunky, it's up to you)
Heat a skillet with a little butter not much and heat your chicken, we're going to heat it up for a bout 10 mins on slow to medium heat, add a little more bar-b-que sauce if you'd like...Now you're ready to add your chicken to your french roll, with mashed potatoes and corn...
You can add fruit for a little desert.. Have fun
